Asparagus Strawberry & Feta Salad

There is something so refreshing about a new salad recipe in the spring. I’m at the point where I’m ready to put away my heavier vegetable side dishes until next fall. This Asparagus Strawberry & Feta Salad fits the bill as the weather warms up. It’s filled with fresh lettuces, fresh vegetables, a light tangy cheese, and tossed with a delicious dressing. It’s truly divine to have on your table this season, especially when everything is fresh from the farmstand.  

The key to making this salad is finding the freshest ingredients possible. Asparagus and strawberries are in season right now and I absolutely love them. They are so tender and sweet and are very easy to cook with. For this salad I typically buy fresh, early spring lettuces since they are crispy and flavorful. After that I simply turn to our favorite feta cheese and our salad is all but perfect! 

The beauty of this salad is how versatile it is. I like to serve it at the table for Easter, but it’s equally at home on a regular dinner table with grilled chicken or pork. It can also make an easier lunch with some leftover protein from dinner on the side. It’s so simple and easy even my children will eat it! 

This is Asparagus Strawberry Feta Salad is going to be a big hit for you this season. If you find there is a time when asparagus goes out of season, simply move on to green beans or whatever fresh green vegetables you can find to replace it. I also have used blueberries or raspberries in this salad if strawberries aren’t available, but I like strawberries the best because they contrast so nicely with the tangy cheese. Add it to a holiday buffet or simply have it on the side of any dinner any night of the week. Enjoy! 



Asparagus, Strawberry & Feta Salad  

 

This is a delicious and colorful, sweet-and-savory salad perfect for spring gatherings! 

 

Ingredients: 

  • 1 bunch asparagus, blanched and chopped into ½-inch size pieces 

  • 1 cup fresh strawberries, rinsed and sliced 

  • 4 oz feta cheese, crumbled 

  • ¼ cup toasted sliced almonds 

  • 4 cups mixed greens  

 

For the Dressing: 

  • 3 tbsp olive oil 

  • 1 tbsp honey 

  • 2 tbsp balsamic vinegar 

  • Salt and pepper (to taste) 

 

Instructions: 

  1. Whisk together the olive oil, honey, balsamic vinegar, salt, and pepper in a small mixing bowl. 

  2. In a large bowl, toss mixed greens, asparagus, and strawberries. 

  3. Drizzle with dressing and gently toss to coat. 

  4. Top with crumbled feta and toasted almonds. 

  5. Serve immediately for a crisp, refreshing salad.
