Peach Banana Bread

I love making banana bread. I've made Banana Pumpkin Chocolate Chip Bread and Apple Cinnamon Banana Bread on this show before, and here's a new one I've made with peaches. Peach Banana Bread is a great summer variety because it calls for delicious chopped peaches, which we find fresh here in the summer months. The peach and banana flavors pair beautifully together and make a wonderful treat.

In this recipe I used canned peaches, which I've finely diced. However, if you have fresh peaches on hand I highly recommend you use them. We are in peach season here in the Northeast so that's what I've been using lately. Either way, the peaches should be ripe and juicy because that is how you're going to get the best flavor out of them.

This bread is a classic quick bread that comes together in one bowl. It's easy to whip up whenever you have fresh bananas on hand. For this summer Peach Banana Bread I recommend serving it with a scoop of vanilla ice cream to make a delicious summer dessert!


Peach Banana Bread 


Ingredients (1 loaf) 

  • 3 ripe bananas, mashed 

  • 3/4 cup sugar  

  • 1/3 cup melted butter 

  • 2 eggs, room temp 

  • 1 tsp vanilla extract 

  • 1 1/2 cups all-purpose flour 

  • 1 tsp baking soda 

  • 1/2 tsp baking powder 

  • 1/2 tsp salt 

  • 1/2 tsp cinnamon 

  • 1/4 tsp nutmeg  

  • 3/4 to 1 cup canned peaches, finely diced 

 

Instructions 

  1. Preheat the oven to 350°F. Grease and line a loaf pan. 

  2. In a large bowl, stir the mashed bananas, sugar, butter, eggs, and vanilla. 

  3. Dry bowl: Whisk flour, baking soda, baking powder, salt, cinnamon, nutmeg. 

  4. Fold the dry ingredients into the bowl with the wet ingredients. Working carefully, fold in the peaches. 

  5. Carefully pour the batter into the loaf pan and use a spatula to spread it out evenly. 

  6. Bake the bread 55–65 minutes, tenting loosely if the top looks like it is burning. 

  7. When a cake tester comes out clean, remove the bread from the oven. Allow it to cool for 15 minutes in the pan, then remove it to a cooling rack to cool completely.
