APPLE CIDER DONUTS

Grab your coziest sweater, because today we’re making Apple Cider Donuts! With warm spice, a cinnamon-sugar coating, and apple flavor in every bite, these donuts bring a little taste of the orchard into your kitchen. This version is baked, not fried, and makes twelve tender donuts in about 35 minute

The trick to that lovely apple flavor is reducing the cider! Start by simmering 1½ cups of apple cider until it cooks down to about ½ cup. Let it cool while you preheat your oven to 350°F and grease your donut pan. Reducing the cider concentrates the flavor, so every bite tastes like autumn.

Whisk together your ingredients, then spoon the batter into a piping bag or a zip-top bag with the corner snipped off. Pipe it into the donut pan until each cavity is about three-quarters full, then bake for 10–12 minutes, until the donuts spring back when gently poked. While they’re still warm, brush them with melted butter and toss them in granulated sugar and cinnamon for that irresistible cider donut coating!

Apple Cider Donuts

Description

Baked Apple Cider Donuts deliver the cinnamon-sugar flavor of a fall cider donut without deep frying. Reducing the cider concentrates the apple flavor, and baking the batter in a donut pan keeps the recipe fast and manageable at home.


Ingredients

·         1 1/2 cups apple cider

·         2 cups all-purpose flour

·         1 teaspoon baking powder

·         1/2 teaspoon baking soda

·         1 teaspoon ground cinnamon

·         1/4 teaspoon ground nutmeg

·         1/2 teaspoon kosher salt

·         1/2 cup packed brown sugar

·         1 large egg

·         1/2 cup whole milk

·         4 tablespoons unsalted butter, melted

·         4 tablespoons unsalted butter, melted, for coating

·         1/2 cup granulated sugar

·         1 tablespoon ground cinnamon, for coating


Directions

1. Reduce the cider. Pour apple cider into a small saucepan and simmer until reduced to about 1/2 cup. Cool.

2. Heat the oven. Heat oven to 350°F and grease a donut pan.

3. Mix the dry ingredients. Whisk flour, baking powder, baking soda, cinnamon, nutmeg and salt.

4. Mix the wet ingredients. In another bowl, whisk brown sugar, egg, milk, melted butter and the cooled reduced cider.

5. Combine. Add the wet ingredients to the dry and stir just until combined.

6. Fill the pan. Transfer batter to a piping bag or zip-top bag, snip the corner and pipe into the donut cavities about three-quarters full.

7. Bake. Bake for 10-12 minutes, until the donuts spring back lightly when touched.

8. Coat. Mix granulated sugar and cinnamon in a shallow bowl. Brush warm donuts with melted butter and toss in cinnamon sugar.

9. Serve. Serve warm or at room temperature.
