Nothing says fall quite like an Apple Pie baking in the oven! Tender cinnamon apples, flaky pastry, and a golden crust make this such a comforting dessert to share. I’m using refrigerated pie crust to keep things simple—because a homemade pie doesn’t have to mean making every part from scratch!

The secret to a delicious filling is using a mix of tart and sweet apples, like Granny Smith and Honeycrisp. Toss them with brown sugar, granulated sugar, flour, cinnamon, and a little fresh lemon juice, then pile everything into your crust and dot the top with butter. A few simple ingredients come together to create that classic apple pie flavor!

For the top, you can keep the crust whole or cut it into strips to create a pretty lattice like mine. Brush it with beaten egg and add a sprinkle of coarse sugar before baking until golden and bubbling. The hardest part is waiting for it to cool, but those two hours help the filling set so you can cut beautiful slices!

I love serving this Apple Pie with a scoop of vanilla ice cream or a dollop of whipped cream. Whether you’re making it for Thanksgiving or a cozy fall evening at home, it’s a delicious way to bring everyone around the table. Watch the video above to bake along with me, and find the full recipe below!

Golden, Flaky Apple Pie with Cinnamon Apples

Makes: 8 servings

Bake: 400°F for 45-55 minutes

Total Time: about 1 hour and 15 minutes, plus cooling

Description

This easy Apple Pie keeps the classic combination of tender cinnamon apples and flaky pastry while using refrigerated crust to save time. A mix of tart and sweet apples gives the filling better flavor and texture, making it a practical homemade dessert for fall or Thanksgiving. In Greece apples are usually found in cakes and donuts, and in America it’s more commonly found in pie.

Ingredients

• 2 refrigerated 9-inch pie crusts

• 6 medium apples, such as Granny Smith and Honeycrisp

• 1/2 cup packed brown sugar

• 1/4 cup granulated sugar

• 2 tablespoons all-purpose flour

• 1 1/2 teaspoons ground cinnamon

• 1 tablespoon fresh lemon juice

• 2 tablespoons unsalted butter, cut into small pieces

• 1 large egg, beaten, for egg wash

• Coarse sugar, optional, for topping

Directions

1. Heat the oven. Heat oven to 400°F.

2. Prepare the apples. Peel, core and thinly slice the apples.

3. Make the filling. In a large bowl, toss apples with brown sugar, granulated sugar, flour, cinnamon and lemon juice.

4. Butter the bottom of pie dish. Fit one pie crust into a 9-inch pie dish.

5. Fill. Pile the apple mixture into the crust and dot the top with butter.

6. Add the top crust. Cover with the second pie crust or cut it into strips for a lattice. Crimp the edges.

7. Finish the crust. Brush the top with beaten egg and sprinkle with coarse sugar, if using. Cut several vents if using a solid top crust.

8. Bake. Bake for 45-55 minutes, until the crust is golden and the filling is bubbling. Cover the edges with foil if they brown too quickly.

9. Cool. Cool for at least 2 hours before slicing so the filling can set.
