Greek Marinated Mushrooms

Greek salad dressing is used for much more than just classic Greek salad. In this recipe, the red wine based vinaigrette is used to marinate simple mushrooms to give them flavor and texture. These Greek Marinated Mushrooms are a delicious side dish for summer, and also work well as a topper for pasta or poultry!

The nice thing about this side dish is it comes together very quickly and should be made in advanced. When I'm having friends over I make these in the morning, or the day before, and let them marinate until it's time to serve them. Not only is this convenient, but it helps the flavor deepen and texture improve.

I love these for summer because they are a nice, cool side dish. I think everyone appreciates this when it is hot outside. Nobody wants to be standing over a hot stove cooking, and nobody really wants to be eating hot food, either. You'll love having these Greek Marinated Mushrooms on your table this summer, they are a wonderful, easy side dish for summer!

Greek Marinated Mushrooms (Μανιτάρια Μαριναρισμένα)
These marinated mushrooms are the perfect dish to have on a table as a side dish or topping for poultry or pasta.
Ingredients
1 lb (450 g) fresh button mushrooms or cremini mushrooms, cleaned
¼ cup extra-virgin olive oil
2–3 cloves garlic, minced
Juice of 1–2 lemons (about 3–4 tbsp)
2 tbsp red wine vinegar or white wine vinegar
1 tsp dried oregano
½ tsp crushed red pepper flakes (optional, for slight heat)
Salt & freshly ground black pepper, to taste
2 tbsp fresh parsley, chopped
Optional: 1 bay leaf or few sprigs fresh thyme
Instructions
In a large skillet, heat 2 tbsp olive oil over medium heat.
Add mushrooms and sauté 5–7 minutes, until they begin to soften and release water.
Remove from heat and let cool slightly.
In a bowl, whisk together remaining olive oil, garlic, lemon juice, vinegar, oregano, red pepper flakes (if using), salt, and pepper.
Place the cooked mushrooms in a shallow dish or jar.
Pour marinade over mushrooms and toss to coat.
Add parsley and bay leaf or thyme if using.
Cover and refrigerate at least 2 hours, preferably overnight, for best flavor.
Bring to room temperature before serving.
