Pumpkin Chocolate Chip Cookies

It’s officially pumpkin season, and these Pumpkin Chocolate Chip Cookies are a sweet way to celebrate! They’re soft and packed with pumpkin puree, brown sugar, warm pumpkin pie spice and plenty of chocolate chips. Even better, they come together in about 25 minutes and make about two dozen cookies. A simple seasonal dessert with all those cozy fall flavors!

Start by heating your oven to 350°F and lining your baking sheets with parchment. Beat half a cup of softened unsalted butter with three-quarters of a cup of packed brown sugar until smooth and creamy. Then beat in a third of a cup of pumpkin puree and a teaspoon of vanilla extract. In a separate bowl, whisk together one and three-quarter cups of all-purpose flour, half a teaspoon of baking soda, a teaspoon of pumpkin pie spice and half a teaspoon of kosher salt. Add the dry ingredients to the pumpkin mixture and mix just until combined.

Now for the best part: fold in a cup of semisweet chocolate chips! Drop rounded tablespoons of dough onto your prepared baking sheets and bake for 12 to 14 minutes, until the edges are set. The centers will still look soft, and that’s exactly what you want. Let the cookies cool on the baking sheet for five minutes, then transfer them to a rack.

This recipe makes about two dozen Pumpkin Chocolate Chip Cookies, so there’s plenty to go around! Pack them into lunchboxes, bring them to a fall potluck or pile them onto a plate for a cozy movie night. Pair them with a glass of cold milk or a mug of hot cocoa for a sweet taste of pumpkin season.

  5. Combine. Add the dry ingredients to the pumpkin mixture and mix just until combined.

  6. Add chocolate. Fold in chocolate chips.

  7. Scoop. Drop rounded tablespoons of dough onto the prepared baking sheets.

  8. Bake. Bake for 12-14 minutes, until the edges are set.

  9. Cool. Cool on the baking sheet for 5 minutes, then transfer to a rack.
