Pumpkin Pasta

If you're craving something warm, creamy and totally autumnal, you're going to love this Pumpkin Pasta! Pumpkin isn't just for lattes and pie, you know. Blended with Parmesan, cream and a pinch of warm nutmeg, it turns into a silky, dreamy sauce that hugs every noodle. Best of all, the sauce comes together while the pasta cooks, so dinner is on the table in just 20 minutes. No oven required!

Quick tip: make sure you grab pumpkin puree, not pumpkin pie filling. They sit side by side on the shelf, and the filling is already sweetened and spiced!

Description
Creamy Pumpkin Pasta is a quick fall dinner made with pumpkin puree, Parmesan, cream and warm nutmeg. The sauce comes together while the pasta cooks, giving the dish a rich seasonal flavor without requiring a long cooking time.
Ingredients
12 ounces rigatoni or penne
1 tablespoon extra-virgin olive oil
2 garlic cloves, minced
1 cup pumpkin puree (not pumpkin pie filling)
1/2 cup heavy cream
1/2 cup grated Parmesan, plus more for serving
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Pinch of ground nutmeg
1/2 cup reserved pasta water, as needed
Fresh sage, for garnish
Directions
1. Cook the pasta. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
2. Cook the garlic. Heat olive oil in a large skillet over medium-low heat. Add garlic and cook for about 30 seconds, until fragrant.
3. Build the sauce. Stir in pumpkin puree and heavy cream. Cook for 2-3 minutes.
4. Season. Add Parmesan, salt, pepper and nutmeg and stir until smooth.
5. Add the pasta. Add drained pasta and toss to coat.
6. Adjust the sauce. Add reserved pasta water a little at a time until the sauce is creamy and coats the pasta.
7. Serve. Finish with additional Parmesan and fresh sage.
