Filming this episode for Street Corn Salad was so much fun. We love ordering street corn at Mexican restaurants and my family was thrilled when I made this recipe at home. I used frozen kernels I bought at the store, but I'll definitely use fresh corn when it's available this summer.

This is the perfect salad to serve at taco night or even bring to a BBQ. It's creamy, salty, and tangy, with just a hint of lime to round it out. All the ingredients are easy to find and it's very easy to get on the table in just a matter of minutes.

The biggest debate we have at home is whether it's best served hot or cold. Half of my family likes it chilled, but I think it's better when it's warm. Either way, you can't go wrong! Enjoy this Street Corn Salad this spring, your family will really enjoy it!

Street Corn Salad (Esquites)
My kids love street corn and this salad reminds them of their favorite restaurant. I like to serve this on Taco Night and it’s great for a party!
Ingredients (serves 4–6)
4 cups corn kernels (fresh, frozen, or canned—drained)
2 tbsp butter or olive oil
¼ cup mayonnaise
¼ cup sour cream or Mexican crema
½ cup crumbled cotija cheese
1 tbsp fresh lime juice (plus more to taste)
1 clove garlic, minced (optional)
1 tsp tajín, (you can use smoked paprika or chili powder if you don’t have Tajin)
Salt & black pepper, to taste
¼ cup chopped cilantro (optional)
2 tbsp finely diced red onion or scallions (optional)
Instructions
Heat a large skillet over high heat. Melt the butter, add the corn, and cook it for 5–7 minutes, stirring occasionally, until lightly charred.
In a bowl, mix the mayonnaise, sour cream, lime juice, garlic, tajin, salt, and pepper.
Add the hot corn to the dressing and toss well. Stir in cotija cheese, cilantro, and onion if using.
Adjust salt, lime, and spice. Serve warm or chilled.
