Homemade Potato Chips

I had to film this episode for you because I think Homemade Potato Chips are one of the easiest ways elevate any meal. They do take a bit of time to come together, but I promise the effort is worth it.

One of the keys to helping the process go smoothly is laying out all of your equipment before you start. You want to make sure the potatoes go directly into the water once they're sliced. That way they won't brown and the starch will begin to be pulled out of them. Then, proceed with the baking process once the potatoes have completed their soaking.

I like to serve these when they are warm and crispy right out of the oven. They will last in a closed container for a few days, but I rarely have any leftover when I make a big batch. I serve them with lobster rolls and sandwiches all summer long. They also make a terrific later afternoon snack when served with a rich blue cheese dip. Homemade Baked Potato Chips
There’s nothing better than homemade potato chips with your summer sandwiches!
Ingredients
2–3 large potatoes, (I use Idaho potatoes)
1–2 tbsp olive oil
Salt, to taste
Instructions
Prep the Potatoes
Preheat oven to 400°F.
Wash the potatoes well. Leaving the skin on, slice them very thinly (1–2 mm-thick) using a sharp knife or mandoline.
Place the potato slices in a bowl of cold water for 20–30 minutes to remove excess starch (helps them crisp)
Drain and pat completely dry with a clean towel.
Toss slices in olive oil, salt, and any desired seasonings, making sure each slice is lightly coated.
Arrange slices in a single layer on a parchment-lined baking sheet. Avoid overlapping. Bake for 15–20 minutes, flipping halfway, until golden and crispy
Keep on eye on these as they bake, thin slices can burn quickly.
Let chips cool on a wire rack to crisp further.
Serve immediately or store in an airtight container for 1–2 days.
