Sheet Pan Lemon Garlic Chicken with Vegetables

I love filming episodes like this because I get so many comments right away about how helpful the recipe is for you. Sheet Pan Lemon Garlic Chicken with Vegetables is absolutely perfect for busy weeknights when the family is hungry and you want to get a flavorful meal on the table with ease.

Lemon Garlic Chicken is one of my favorites because the flavors are bright and tangy, and they pair well with almost any kind of vegetable. It is mild enough for picky eaters, but still tasty enough for the adults! In this case I make the dish with potatoes and green beans, but you could use peppers or broccoli, or whatever else you might have in your crisper.

If I'm really planning ahead I make the recipe even more efficient by putting the chicken and vegetables in a bag with the marinade in the morning. Then, in the evening, all I have to do is spread it out on the sheet pan and pop it in the oven to cook.

Sheet Pan Lemon Garlic Chicken with Vegetables 


This is such a great recipe when you need to get a healthy, flavorful meal on the table efficiently!


Serves 4-6 

Ingredients: 

  • 1 cup olive oil 

  • 1 tablespoon of minced garlic, about 5 to 6 cloves 

  • ½ cup of lemon juice 

  • 1 tablespoon dried oregano 

  • 2 teaspoons of kosher salt 

  • 1 teaspoon freshly cracked pepper 

  • 4 bone-in, skin-on chicken thighs (or breasts) 

  • 1 lb baby potatoes, halved 

  • 1 lb green beans, trimmed 

  • 1 lemon, sliced 


Instructions: 

  1. Preheat oven to 425°F. 

  2. In a large bowl mix the olive oil, garlic, lemon juice and zest, and oregano and whisk together. 

  3. Toss the potatoes, green beans, chicken thighs with olive oil mixture. Spread on a sheet pan. 

  4. Place the chicken on top, season with salt and pepper, and place lemon slices over everything. 

  5. Roast 45-50 minutes until chicken reaches 165°F and vegetables are tender. 

  6. Serve hot.
