Sheet Pan Sausage & Peppers is your answer to serving a delicious, hearty sandwich or protein bowl for dinner. It's the perfect, easy method for making roasted sausage, peppers and onions in the style meant for stuffing into a warm rolls or swirling into a bowls of warm grains.

I've been eating sausage and peppers in a warm roll at the ballpark forever. I think it's one of those signature dishes everyone adores when they're at a game or on the boardwalk. Making it at home is a lot easier than you think when you use this method. It involves adding all the ingredients to a sheet pan, tossing it with seasonings, and roasting them in the oven.

When everything is completely roasted the sausage should be cooked through and the vegetables should be soft and pliable. At this point I recommend swirling everything together and using tongs to stuff them into a soft, warm roll to make a great sandwich. Or, place them in a bowl with freshly cooked rice and some greens to make a whole meal.

Once you master this method for Sheet Pan Sausage & Peppers you'll make it all the time. It's a convenient, easy recipe that can be made many ways and the whole family will love.

Sheet Pan Sausage, Peppers, and Onions

This is a fun, easy way to make sausage with onions. I like to serve this on rolls, or with white rice for the kids. It’s a great quick dinner for a busy weeknight.

Serves 4-6

Ingredients:

  • 1 lb Italian sausage (mild or spicy)

  • 2 bell peppers, seeded and sliced into strips

  • 1 large onion, sliced

  • Olive oil

  • 1 tablespoon Italian seasoning

  • 2 teaspoons salt

  • 1 teaspoon freshly cracked black pepper

Instructions:

  1. Preheat the oven to 425°F.

  2. Toss the sliced peppers and onions with olive oil, Italian seasoning, salt, and pepper. Spread on a sheet pan.

  3. Nestle the sausages among vegetables.

  4. Roast 40-45 minutes, turning sausages halfway, until fully cooked and the vegetables are softened.

  5. Serve in warm rolls or on top of rice!
