BAKED GREEK CHICKEN WINGS


I was so excited to film this episode because everyone loves my Greek Chicken Wings with my Greek Yogurt Blue Cheese Dip. This is my own special twist on a classic recipe that is definitely going to fit the bill for your next sports night at home. We all know how to make basic chicken wings, but this version is just a little different and better than the ones you’ve gotten used to. I also think they are a touch healthier because I make them in the oven instead of the fryer!

The most important part of making these wings is the Greek flavoring. As you’ll see, I make a very flavorful dry rub and make sure the wings are completely coated. Then, I place the wings on a wire rack that’s set inside a baking sheet and bake them to perfection. This baking set-up is critical because having them on the rack enables to hot air to get all around the wings and cook them evenly. I also rotate them once halfway through baking to be sure the skin gets crispy.

While the wings are baking, I make my Greek Yogurt Blue Cheese Dip. This is another twist on the classic dip. I swap out the mayonnaise for Greek yogurt. I find the yogurt much tangier and more flavorful. The rest of the ingredients are very familiar to you – sour cream, hot sauce, and blue cheese. Like classic wings, I serve this dip alongside the finished wings to allow everyone to dip and eat at their leisure. You’ll see the recipe has a moderate amount of hot sauce, feel free to add more if you’d like the dip to be spicier!

BAKED GREEK CHICKEN WINGS


We love serving wings for gameday, or anytime we are planning to watch a big game and want finger foods to nosh on. These wings have a Greek twist with the addition of Mediterranean spices and flavors. I serve these with a Greek yogurt blue cheese tip, my spicy feta dip, and anything else that pairs well.

Serves 4 to 6 people

  • 2 lbs Chicken Wings

  • ¼ cup Olive Oil

  • 2 teaspoons Dried Oregano

  • 2 teaspoons Garlic powder

  • 2 teaspoons Salt

  • 2 teaspoons Paprika

  • ½ teaspoon freshly cracked black pepper

  • 1 ½ Tbsp Fresh rosemary and thyme


  • Preheat the oven to 400 degrees F.

  • Rinse the chicken wings and pat them dry and place them in a large mixing bowl.

  • Sprinkle all the herbs over the chicken then drizzle in the olive oil.

  • Using clean hands to toss all the ingredients with the chicken, rub all the wings until they are completely coated with mixture.

  • Place a wire baking rack on a rimmed back sheet.

  • Place the chicken wings on the wire rack, leaving room between each one, and put it in the oven.

  • Bake the wings for 20 minutes, then take the wings out and quickly turn them over with tongs. Return them to the oven to bake for 20 minutes.

  • Turn the broiler to high and broil the wings for about 5-7 minutes, watch them closely, or until they are evenly crispy but not burned.

  • Remove them from the oven and transfer them to a serving tray. Serve the wings with the Greek yogurt blue cheese dip and celery sticks.
