BEETS AND CITRUS


Beets and Citrus are two flavors that really go hand in hand and they are the two main ingredients of the terrific dish I make in today’s episode! I serve this a lot during the holidays because it can be either an appetizer or a side dish. I often place it on a buffet and people will serve themselves a slice of beet and orange with a drizzle of the dressing on top.

What’s so nice about this dish is how easy it is to assemble. I always cook the beets a couple of days in advance so the hardest part of the preparation is already completed. While the main dishes are in the oven I slice the beets into rounds, peel the oranges and remove the pith, and slice those into rounds as well. I prefer to arrange them in layers on my prettiest long, narrow platters because it really looks so stunning.

The finishing touches of this recipe are the topping of diced red onion and citrus dressing. The onion adds a tidy crunch and hint of acid that pairs beautifully with the sweet dressing. There are many dishes that feature beets, citrus, and onion and that’s because the flavors pair so well together. This citrus dressing is very easy to make in a mason jar. I always think this is the best method because it’s basically foolproof.

There are a few ways you can use this recipe when you entertain. My favorite, as I pointed out above, is adding it to a buffet and allowing people to serve themselves the portion they want. Since the beets are so hearty it functions well as side dish in lieu of potatoes or another heavy starch. You could also plate individual portions on small plates and serve them individually as an appetizer in lieu of a green salad.

No matter how you serve it, I guarantee this will be a winner with your friends and family this holiday season!


BEETS AND CITRUS


This dish is beautiful on a long, thin platter and is ideal holiday celebrations. It can be served as an appetizer or side dish. Place a large spoon or fork on the side and people to serve themselves. This recipe can easily be doubled or tripled depending on the number of guests you have.


Serves 4


  • 1 cooked beet, peeled and slice into rounds

  • 1 orange peeled and sliced in rounds

  • 1 tbsp finely chopped red onion


Citrus Dressing

  • 2 tbsp olive oil

  • 2 tbsp orange juice

  • 1 tsp honey

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • Shake and pour over the beets and oranges


  • Layer the beets and oranges onto the platter in an alternating pattern, slightly overlapping. It should look like they have been fanned out for the length of the platter.

  • Evenly sprinkle the chopped red onion across the entire length of the beets and oranges.

  • Make the dressing by adding the olive oil, orange juice, honey, salt, and pepper to a mason jar and shake them well to combine.

  • Drizzle the dressing evenly over the beets and oranges. Serve!
