Chocolate Chip Ice Cream Cake

This is such a fun and interesting cake to make. I call it the Chocolate Chip Ice Cream Sandwich Cake and it’s exactly what it says it is. It’s like a giant Chipwich. The same summer ice cream treat we all love, but on a giant scale. 

The key to making this is using great ingredients. First, get cookies that are your favorites and are sturdy. Sometimes I’ll make homemade cookies, but I’ll often buy them, too. Then, use your favorite ice cream. In this video I do a classic vanilla ice cream, but you could also use chocolate or really any flavor you’d like.  Then, I add really good chocolate chips, and top it all with our favorite chocolate sauce. 


This obviously isn’t a complicated dessert, but that is exactly the point. Kids and adults absolutely love it because it is appealing to every ice cream lover and carries a lot of nostalgia. In fact, it’s simple enough I hope you feel free to put the kids in charge of it if they’re interested in learning more in the kitchen. They’ll do a great job making this and it’s always nice to give them projects that are manageable and fun! 

Since it is a frozen dessert be sure to keep it completely frozen until right before you serve it. I like to bring it out at the end of a party when people are done swimming for they and ready for a cool treat to finish off the summer evening. Chocolate Chip Ice Cream Sandwich Cake  

 

This is such a fun summer treat. I love making it with my kids and using different flavors of ice cream! 

 

Ingredients 

For the cake: 

  • 12 large chocolate chip cookies (store-bought or homemade) 

  • 1 ½ quarts vanilla ice cream (softened) 

  • ½ cup mini chocolate chips (for garnish) 

  • Chocolate syrup (optional, for drizzling) 

Instructions 

  1. Prepare the cookies: Lay out 6 chocolate chip cookies on a baking sheet or large platter, leaving space in between each. 

  2. Spread the ice cream: Spread a generous layer of softened vanilla ice cream on top of the cookies, making sure to cover them completely. 

  3. Stack and freeze: Place the remaining 6 cookies on top to form a sandwich. Gently press down to compact the layers. 

  4. Garnish: Sprinkle mini chocolate chips along the edges of the ice cream sandwiches for extra texture and flavor. 

  5. Freeze: Place the cake in the freezer and let it freeze for at least 4 hours or until firm. 

  6. Serve: Drizzle with chocolate syrup before serving for an extra indulgent treat.
