GREEK SALAD FLATBREAD


As you’ve seen by now, there are many dishes I make that have Greek salad as one of the main ingredients. It’s such a refreshing, easy salad that I make it all the time and use it in a wide variety of recipes. This Greek Salad Flatbread is a favorite in our house because it’s kind of like a salad pizza. As you’ll see, it comes together very quickly and is a great snack or meal for kids and adults.

If you happen to have Greek salad already prepared from a previous meal than use it up in this recipe. If not, make the salad first so it’s all ready to be assembled when the toasted flatbread emerges hot from the oven. I use our favorite pita for the flatbread. If you can’t find it, you could also use naan, or a pre-made mini pizza crust you find at the store. I brush it with my olive oil and crumble feta on top, which is then melted in the oven. Honestly, at this point, when the bread with melted feta comes out of the oven piping hot you can add any topping you’d like, or serve it as is!

To make this recipe you immediately top the flatbread with the freshly prepared salad. The cool salad contrasts beautifully with the melted feta and crispy bread. I like to slice it into strips, but you could make it into little triangles, or fold it up and eat it like a taco. There is no wrong way to do it! If you’d like some more protein, you could add grilled shrimp or chicken and you’d have a complete meal.

This is a great recipe to have in your back pocket for summer. It’s healthy, easy, and pleases the whole family. It’s is also a great way to use up all the yummy vegetables you have growing in your garden! Enjoy!


Greek Salad Flatbread


This is a fun way to make a Greek style pizza. Greek salad is a staple in our house and this is another way to get my kids to eat it. It makes a great snack or a light meal.


Makes 1flatbread


  • 1 flatbread – store bought

  • ½ teaspoon dried oregano

  • ½ cup crumbled feta


For the salad:

  • ½ cup diced grape tomatoes

  • 1/2 cup diced cucumber

  • 1/4 green peppers, finely diced

  • 1 tsp chopped Peppercinis

  • ¼ cup chopped Kalamata olives

  • 1 tbsp diced red onions


For the dressing:

  • 1 tbsp olive oil

  • 1/3 tsp salt

  • ¼ tsp peppers

  • ½ tsp red wine vinegar



  1. Preheat the oven to 425 degrees F.

  2. Brush the flatbread with olive oil and sprinkle it evenly with the oregano, then feta. Then place it on a baking sheet. Bake it for 10-12 minutes, or until the edges of the flatbread are golden brown and the feta is completely melted.

  3. While the bread is baking, combine the prepared salad ingredients in a large bowl and toss it well.

  4. Prepare the dressing by combining the ingredients in a small jar, placing a cap on top, and shaking it to combine. Drizzle the dressing over the salad and toss to combine.

  5. Once the bread is done baking, top it with the freshly prepared salad. Cut it into wedges and serve!
