Peach & Goat Cheese Flatbread


The brilliance of flatbread recipes is their versatility in the kitchen. You can make almost any flavor you like and they can be served for breakfast, lunch, or dinner! This Peach & Goat Cheese Flatbread is one of my favorites when I’m able to get hold of late season peaches.  Add some goat cheese and arugula and pop it in the oven and you’ve got a great meal. 

When I was making this recipe, peaches were still in season. I love the contrast of sweet peaches, tangy cheese, and peppery arugula, it’s such a great flavor combination. I typically buy the flatbread because making it from scratch can take a while, especially on a weeknight. Then, I assemble the ingredients, add lots of flavor, and pop it in the oven! If you can’t find peaches you can use other stone fruit such as apricots or plum. Or, you can use pears and sliced apples. They’ll all taste great!

To serve this as a light bite, cut it into squares that are bite sized and line them up on a platter. For a meal, cut it into bigger strips and serve it with a crisp white wine. Sometimes I like to serve flatbreads as appetizers instead of a salad. People will nibble on it while they chat, it’s a nice change from your classic salad appetizer.

My kids enjoy this too and I often have them help me make it when they are home. One of the best ways to introduce kids to new foods in the kitchen is to get them to help out. The nice thing is that you really can’t fail when you’re making it at home. Line up the big piece of bread and let them arrange the flavors and textures evenly on top.

Peach & Goat Cheese & Arugula Flatbread


This is a delicious flatbread to enjoy for a snack or a light meal. I like to make it with peaches and goat cheese, the flavor combination is unbeatable!

For the Flatbread:

  • 1 store-bought flatbread

For the Toppings:

  • 1 1/2 cups crumbled goat cheese

  • 2 ripe peaches, thinly sliced

  • 4-6 slices of prosciutto

  • 2 cups fresh arugula

  • 2 tablespoons honey

  • Olive oil for brushing

  • Salt and black pepper, to taste

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Place the store-bought flatbread on a baking sheet lined with parchment paper. Brush the surface of the flatbread with olive oil.

3. Sprinkle the crumbled goat cheese evenly over the flatbread.

4. Place the thinly sliced peaches and prosciutto slices evenly over the goat cheese.

5. Transfer the prepared flatbread to the preheated oven and bake for approximately 8-10 minutes, or until the cheese is slightly melted, and the edges of the flatbread are golden brown.

6. Once the flatbread is out of the oven, scatter 2 cups of fresh arugula over the hot surface. The residual heat will slightly wilt the arugula. Drizzle honey over the top for added sweetness and flavor.

7. Sprinkle a pinch of salt and black pepper over the flatbread, to taste. Slice and serve!
