Roasted Sweet Potatoes with Fresh Cranberries
A delicious and elegant side dish for any dinner! A Great dish to make ahead of time and reheat when you're ready to serve.
ROASTED SWEET POTATOES WITH FRESH CRANBERRIES
6 large sweet potatoes
4 TBSP olive oil
3 sprigs fresh thyme, coarsely chopped
2 sprigs fresh Rosemary, coarsely chopped
1/2 tsp cinnamon
1 bag fresh cranberries
Sea Salt, to taste
Ground Pepper, to taste
Preheat oven to 400*
Peel and cut your sweet potatoes into 1/2”-3/4” cubes.
Place in a mixing bowl and toss with olive oil, salt, pepper, fresh rosemary and thyme.
Lay out in a baking dish and sprinkle with cinnamon.
Bake for 30 minutes (or until just fork tender) add 1 bag fresh cranberries and bake for an additional 15 minutes.
