Tea Sandwiches

This was a really fun episode to film because we make Tea Sandwiches all the time for my catering company. They are fun to eat and always look elegant on a table. Today I want to show how we make them in the kitchen.

Cucumber and Cream Cheese Sandwiches are especially elegant for a ladies' luncheon or light meal at home. I like to cut them into bite-sized pieces when they're on a buffet table. They look really pretty with this presentation and are easy to eat when you're having fun conversations.

Smoked Salmon and Herbed Cream Cheese sandwiches are very flavorful and are great for brunches. I like to serve these open-faced sometimes. The amount of onion I use depends on the event!

Egg Salad Tea Sandwiches are a true classic. I recently shared my egg salad recipe, and here it is again with a presentation fit for the fanciest luncheon. Remember to keep these chilled before serving!

Chicken Salad Sandwiches are a great choice for some events because they're so hearty. I always have a light green salad on the side for people to eat alongside this sandwich. It makes the perfect light meal!
Cucumber & Cream Cheese SandwichesÂ
Ingredients:Â
White or whole wheat bread, crusts removedÂ
4 oz cream cheese, softenedÂ
1 tbsp fresh dill, choppedÂ
1 tbsp chives, chopped (optional)Â
1 small cucumber, thinly slicedÂ
Salt and pepperÂ
Instructions:Â
Mix cream cheese with dill, chives, salt, and pepper.Â
Spread on bread slices.Â
Layer cucumber slices evenly, season lightly.Â
Top with another slice, cut into small rectangles or triangles.Â

Smoked Salmon & Herb Cream CheeseÂ
Ingredients:Â
White, rye, or pumpernickel breadÂ
4 oz cream cheese, softenedÂ
1 tsp lemon juiceÂ
Fresh dill or chivesÂ
4 oz smoked salmonÂ
Optional: capers, thinly sliced red onionÂ
Instructions:Â
Mix cream cheese with lemon juice and herbs.Â
Spread on bread.Â
Add smoked salmon and optional toppings.Â
Cut into small finger sandwiches.Â

Ingredients:Â
4 hard-boiled eggs, choppedÂ
2 tbsp mayonnaiseÂ
1 tsp Dijon mustardÂ
Salt and pepperÂ
Chopped chives or parsleyÂ
Soft white or whole wheat breadÂ
Instructions:Â
Mix eggs with mayo, mustard, herbs, salt, and pepper.Â
Spread on bread slices.Â
Top with another slice and cut into rectangles or triangles.Â

1 cup cooked chicken, shreddedÂ
2 tbsp mayonnaiseÂ
1 tsp Dijon mustardÂ
1 tbsp finely chopped celeryÂ
1 tsp lemon juiceÂ
Salt and pepperÂ
Soft bread of choiceÂ
Instructions:Â
Combine all ingredients for chicken salad.Â
Spread on bread.Â
Cut into small, elegant sandwiches.Â
