Watermelon Pizza


Calling this pizza is tongue in cheek, there is no crust, cheese or sauce to be found! Watermelon Pizza is similar to regular pizza, though, in the sense that you cut the watermelon into rectangular slices, top it with a yummy salad and enjoy it one bite at a time.

The number of servings this recipe makes largely depends on the size watermelon you buy. If you buy a huge one, adjust the amount of ingredients you need for the salad. You can also change up what you add to the salad if you like, there are numerous kinds of toppings that would taste incredible with fresh watermelon as the base

Don’t assemble this until you are ready to serve it. Watermelon sweats, which means it will slowly drain of juice over time. Also, the balsamic reduction is best when it’s drizzled on top of the salad, you don’t want it to get too absorbed into the fruit, which will happen if it sits for too long.

I’ve been known to eat this with a fork and knife on occasion. In the summer I pair it with a grilled protein to make a complete summer meal. Even my kids like it because they’ll eat nearly anything that involves watermelon. This also reminds them of our favorite watermelon feta salad.

Watermelon Pizza


This is a cheeky title for a fun summer snack. I even serve it was a side dish at lunch or dinner sometimes! I love watermelon in the summer because it’s so flavorful and hydrating. This “pizza” is essentially sliced watermelon with a small arugula salad on top. It’s so much fun to serve, everyone loves it!

Makes 4 – 6 servings (depending on size of watermelon)

  • 1 watermelon sliced into triangles with the rind still on

  • ¼ cup chopped red onion

  • ½ cup Baby Arugula

  • 1 tbsp chopped Mint

  • Balsamic Reduction

  • ½ cup Feta

  1. Arrange the watermelon slices on a platter so the rind is facing out and is easy to pick up.

  2. In a salad bowl, toss the red onion, arugula, and mint until combined.

  3. Use tongs to arrange the salad evenly on top of the watermelon slices.

  4. Drizzle with balsamic reduction on top of everything and sprinkle the feta on top.

Eat each slice and enjoy!
