Brisket Grilled Cheese

There is grilled cheese and then there is Brisket Grilled Cheese. Yes, this is exactly what it sounds like, it is a decadent, wonderful grilled cheese filled with rich, succulent brisket. This recipe takes a regular kid-like snack and turns it into a wonderful meal.

In this case, to make this recipe I bought cooked brisket at the store and reheated it to make the sandwich. However, this is a great sandwich to make with leftover brisket you've made at home. In case you're interested in making it yourself here is my recipe!

To make this perfect grilled cheese please do not skimp on the butter or cheese. These are the two most critical ingredients because they are the fat and the flavor. The brisket is rich on its own and you really must have the rest of the sandwich be flavorful too or else you'll lose the balance.

My other "must" with this sandwich is that it's served fresh off the pan. Grilled sandwiches taste the best when they're piping hot and the cheese is fully melted. So, make sure your eager eaters are standing by while you cook!

Brisket Grilled Cheese
Grilled cheese is a classic sandwich beloved by so many. Adding brisket gives it more heft and turns it into a main meal for the adults, too.
Ingredients (2 sandwiches)
4 slices of sourdough or thick white bread
1½ cups cooked brisket, chopped or shredded (smoked or braised)
1½ cups cheese, shredded or sliced (we use a mix of provolone and mozzarella)
2–3 tbsp butter, softened
1 tsp Dijon mustard (optional)
Black pepper, to taste
Instructions
Gently heat the brisket in a skillet with a splash of water or BBQ sauce so it’s warm and juicy (not crispy).
Butter one side of each slice of bread. On the unbuttered side, spread a thin layer of Dijon if using.
Make the sandwich: Place bread butter-side down, Add cheese, Add brisket, Top with more cheese, Finish with the second slice of bread (butter-side up)
Heat a skillet or griddle over medium-low heat and place the sandwich in it once it is warmed up.
Cook the sandwiches 3–5 minutes per side, pressing lightly, until bread is golden and cheese is fully melted.
Let rest 1 minute, then slice and serve hot.
