Chicken Parmesan

I think it's safe to say Chicken Parmesan is one of the most classic dinner dishes of all time. My mother made it regularly for us growing up and now I make it for my kids a lot. I think there are many households that can say the same thing! It's one of those casseroles that contains all the best flavors, is filling, and makes the perfect meal any night of the week.

I don't skimp on the traditional ingredients and method for making this recipe. Sometimes people make it with baked, not breaded, chicken, or don't serve it with pasta. I do both. I love the contrast of the chicken with the crispy coating full of Italian flavors topped with tomato sauce and melted cheese. Then I serve it on a bed of pasta so I can swirl all the flavors together on my fork. To round it out, I serve a salad and garlic bread on the side and a great weeknight meal is ready!

It's worth noting this casserole is excellent to make ahead. I often prepare it and slip it in the oven before dinner. I find this very helpful on busy weeknights! If we have a crowd of kids coming over after a sports event I make two or three of these casseroles and everyone is happy with plenty to eat.

Chicken Parmesan is here to stay in my house for this generation and I hope it is in your home, too!



Classic Chicken Parmesan 


This is a timeless family favorite. It can easily be made ahead and slipped in the oven at the end of the day. 


Ingredients (serves 4) 

  • 2 large boneless, skinless chicken breasts 

  • Salt & black pepper 

  • 1 1/2 cups all-purpose flour 

  • 3 large eggs 

  • 2 cups Italian-seasoned breadcrumbs (or panko) 

  • ½ cup grated Parmesan cheese 

  • 2 tsp garlic powder 

  • 2 tsp Italian seasoning 

  • 2 cups vegetable oil for frying 

  • 1½ cups marinara sauce 

  • 1½ cups shredded mozzarella 

  • Fresh basil or parsley (optional) 

 

Instructions 

  1. Preheat the oven to 425 degrees F. 

  2. Slice the chicken breasts in half horizontally to make 4 thin cutlets. Season both sides pf each breast with salt and pepper. 

  3. Set up 3 bowls for the breading station: Flour, Beaten eggs, Breadcrumbs mixed with Parmesan, garlic powder & Italian seasoning, 

  4. Dredge the chicken in the flour, followed by the eggs, followed by the breadcrumb mixture until all four pieces are breaded. 

  5. Heat a skillet over medium heat with vegetable oil. Cook the chicken 5-7 minutes per side until golden and cooked through. Transfer to a baking dish. 

  6. Assemble the casserole by spooning the marinara over each cutlet. Top each cutlet with mozzarella and a little extra Parmesan. 

  7. Bake the casserole for 15-20 minutes, until the cheese is bubbly and melted. 

  8. Garnish with fresh basil or parsley. Serve with pasta, garlic bread, or a green salad.
