It wouldn’t be right to let one more summer pass by without me filming an episode about the classic Chocolate Cookie Icebox Cake. This cake is a true classic and pleases just about everyone who tries it. I grew up enjoying this cake because my mother used to make it, and now I make it for my family. The premise of this recipe is that chocolate wafer cookies are layered with whipped cream and then popped in the fridge.

While the whipped cream and cookies are chilling, the cream permeates the cookies and softens them slightly. So, when you’re served a piece, you get a delicious bite of chocolate cookie and cream that’s become one flavor and texture. It’s totally genius in every way. Because it’s a chilled dessert it also manages to be nice and refreshing, which is kind of perfect on a summer’s day.
You can get adventurous with this if you’d like. You could make the whipped cream chocolate, or cover it all in sprinkles for an extra special touch. Or, you can make it very neat when you put it into chill and serve it on a platter as an extra fancy dessert.

This Chocolate Cookies Icebox Cake is a bite of nostalgia that everyone loves. Even when I first introduced it to my kids they couldn’t quite believe I’d grown up eating it, too. Chocolate Icebox Cake
This is the best simple, no-bake dessert with layers of chocolate wafers and whipped cream that turns into a soft, cake-like texture after chilling. It’s a classic dessert for a reason; it never goes out of style.
Ingredients:
2 cups heavy whipping cream
¼ cup powdered sugar
1 teaspoon vanilla extract
1 package (9 oz) chocolate wafer cookies (such as Nabisco Famous Chocolate Wafers)
Chocolate shavings or cocoa powder (for garnish)
Instructions:
In a large bowl, make the whipped cream by beating the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread a thin layer of whipped cream on the bottom of a serving plate or baking dish. Make the layer of whipped cream about 6x9-inches.
Arrange a single layer of chocolate wafer cookies over the whipped cream. Spread another layer of whipped cream on top. Repeat the layers until you run out of cookies, ending with a layer of whipped cream.
Cover loosely with plastic wrap and refrigerate for at least 4-6 hours, preferably overnight. This allows the cookies to soften into a cake-like texture.
Before serving, garnish with chocolate shavings or a light dusting of cocoa powder. Slice and enjoy!
