Crusted Lamb Chops with Green Tahini Sauce

This recipe for Crusted Lamb Chops with Green Tahini Sauce almost needs no introduction. That lamb is a very traditional Greek food is no surprise. We eat it all the time in Greece and a lot in America, too. I have so many different ways I prepare lamb. It really depends on the season and what is fresh and available for a garnish. In this case, we use fresh parsley from our herb pots and tahini and garlic to create the perfect sauce to drizzle on our freshly cooked chops. 

Lamb needs to be cooked through so none of the meet is raw. However, you don’t want to overcook it or it becomes too tough. This is one of the most important parts to know when it comes to cooking lamb. I like it when it is cooked through but still tender. 

We serve these lamb chops with potatoes and a green vegetable on the side. They work well for dinner parties, family holidays, or even an easy weekend meal. I don’t typically prepare lamb chops for weeknights because they take a little too long to prepare with the sauce and everything else.

Crusted Lamb Chops with Green Tahini Sauce 

 

There is nothing more Greek than lamb for a holiday meal! This is a favorite way to make chops. The flavors are vibrant and the meat is so tender! 

 

For the Lamb Chops (serves 4): 

  • 8 lamb chops (about 1 inch thick) 

  • 1 tsp cumin 

  • 1 tsp paprika (smoked or sweet) 

  • ½ tsp turmeric 

  • 1 tsp ground coriander 

  • 1 tsp dried oregano 

  • 1 tsp salt 

  • ½ tsp black pepper 

  • 2 tbsp olive oil (for searing) 

 

For the Green Sauce: 

  • 2 garlic cloves (minced) 

  • 3 tbsp tahini 

  • 3 tbsp fresh lemon juice (about 1 lemon) 

  • 2 tbsp water (adjust for desired consistency) 

  • ¼ tsp salt (adjust to taste) 

  • ¼ tsp black pepper 

  • ¼ cup finely chopped fresh parsley 

 

 Instructions: 

1. Prepare the Rub: In a small bowl, combine cumin, paprika, turmeric, coriander, oregano, salt, and pepper. Rub the mixture generously on both sides of the lamb chops. Let them rest for 15-20 minutes to absorb the flavors. 

 

2. Make the Green Sauce: In a bowl, whisk together tahini, lemon juice, minced garlic, water, salt, and pepper until smooth and creamy. Stir in the chopped parsley. Adjust water for your preferred consistency. 

 

3. Cook the Lamb Chops: 

  • Heat olive oil in a skillet over medium-high heat. 

  • Sear the lamb chops for 3-4 minutes per side (for medium-rare) or 5-6 minutes per side (for medium). Adjust time depending on thickness. 

  • Let the lamb chops rest for 5 minutes before serving. 

4. Serve: Arrange the lamb chops on a platter and drizzle the green sauce on top or serve it on the side. Enjoy your flavorful, crusted lamb chops!
