Hearts of Palm Salad is a great recipe to keep in your back pocket. It’s a very easy, healthy salad that you can make for friends or family in just a few minutes. I make this a lot during the warmer months because it pairs so well with everything. It can be served with fish, grilled chicken, pasta, or shrimp. I love the versatility of it, that, in my opinion, is the hallmark of a dependable recipe.
At this point I want to give you a background on Hearts of Palm because I get asked it about it all the time. Hearts of Palm are the core of palm plant stems. They are grown in tropical areas, harvested, and preserved. The “hearts” of the stems never see the light of day, which is why they are white. Their flavor is very mild and they are actually quite nutritious. I like that you don’t have prepare or cook them in any way. You simply drain them from the can and slice them into desired sizes for your salad.
Since Hearts of Palm are so mild it’s really easy to pair them with bolder flavors, tangy dresses, and salt and pepper. You’ll see this salad is made with simple, fresh flavors from the garden. However, if you have more vegetables in the crisper, fresh herbs, or a different dressing you want to try, this is a great salad to try it with. Greek food is all about fresh flavor and this salad can be the backdrop for nearly anything you want!
To add to the convenience of this salad, you can make it ahead of time and keep it covered in the fridge until you are ready to eat. It also stays well for a couple of days if you plan on using it for a few meals, or packing it for lunch. This will become a go-to for you in the warmer months, I hope you enjoy it!
HEARTS OF PALM AND AVOCADO SALAD
This is one of summer go-to salads. It’s easy and refreshing. I love the twist of the lime in the dressing. I always make it on taco night, serve it alongside fish, and take it to friends houses as a dish to pass.
Makes 4 servings
1 14-ounce can hearts of palm, drained and sliced
2 fresh avocados, peeled and cubed
½ bunch cilantro, roughly chopped
For the dressing:
3 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely chopped
Zest for ½ lime
½ teaspoon salt
This salad comes together easily. Add the hearts of palm, avocados, and cilantro to a salad bowl.
Make the dressing by whisking together the olive oil, lime juice, garlic, lime zest, and salt.
Drizzle it over the salad and toss everything together very lightly and serve.
