Pasta is the best kind of comfort food. It comes together so quickly and there are so many ways to make it. Today I’m making Lemon Artichoke Pasta with Feta. It’s an easy, healthy pasta dish that simple to make, and even easier to eat..
To make this I start with artichoke hearts from a can that have been drained. You could also use frozen artichokes that have been thawed. I choose either of these before I trim whole artichokes from scratch – I find that to be really hard and I end up wasting a lot!
With the artichokes heart ready I simply warm and flavor them on the stovetop. Then, I have the pasta cooking alongside while they are being prepared. For this episode I’m using my favorite 776 Deluxe pasta. It’s seriously amazing – the long noodles absorb the sauce and the flavors so well! Several people have told me it’s the best pasta they’ve ever eaten.
When I bring the pasta together in a bowl to serve I give it a nice big dusting of feta cheese. The salty tang of the feta is ideal for highlighting the flavors of the lemon and artichoke hearts.
I often serve this pasta alongside a light protein like chicken or fish, along with a bright green salad in the side. It’s the perfect meal any time of year. I hope you enjoy it as much as we do!

Lemon zest and Artichoke Pasta
This is a wonderful weeknight meal that my family loves. It also makes a great side dish! I use my favorite 776 pasta with this dish whenever possible. It is the best because it holds the flavors and pairs so well with the artichokes.
Serves 4 to 6
1 pound pasta
2 tbsp olive oil
2 tbsp butter
3 cloves whole Garlic, finely chopped
10 artichoke hearts, quartered
Zest of 2 lemons
½ tsp salt
pinch of pepper
Feta for garnish
Prepare the pasta according to the package directions.
While the pasta is cooking, add the butter, olive oil and garlic to a large saute pan. Cook for about 3 minutes, or until the garlic is tender.
Then, add the artichoke heart quarters and saute well until heated through.
Stir in the lemon zest, salt, and pepper.
Add the cooked pasta to the pan and toss the ingredients really well. Garnish with feta and serve hot!
