Naturally Dyed Easter Deviled Eggs

NATURALLY DYED DEVILED EGGS

These pretty eggs are dyed with natural products, so they are safe to eat. The spices, beets and cabbage dye them gorgeous hues that will look great on any Easter table.


Makes 6 Servings

Timing: 1-hour minutes, plus time for soaking


Ingredients

6 Hard Boiled Eggs, cut in half with yolks reserved

3 beets

1 head purple cabbage

1 tbsp ground turmeric

4 tbsp mayo

½ tsp Dijon mustard

White pepper to taste

Paprika and Chives for garnish


Instructions

  1. Peel and cut your beets into 1’’ cubes. Boil for 30 minutes hour and reserve red water. Let water come to room temperature.

  2. Cut your cabbage into 1’’ slices. Boil for 30 minutes hour and reserve purple water. Let water come to room temperature.

  3. Bring 2 quarts of water to a boil, add one tbsp turmeric and reserve yellow water. Let water come to room temperature.

  4. Place 2 eggs (4 halves) in each colored water. Let soak overnight in the refrigerator.

  5. When you’re ready to assemble your eggs, remove from colored water and dry with a paper towel.

  6. Mix egg yolks, mayo, mustard, and white pepper until well combined.

  7. Add your yolk mixture to a Ziplock and trim to tip to be able to pipe your yolk mixture into egg whites.

  8. Top with a dusting of paprika and chive for garnish, enjoy!
