Peach and Raspberry Popsicles


Outside temperature defines a lot of what I cook in the summer. It gets very hot in Connecticut and in Greece and I really try to work with cooling, hydrating ingredients as much as possible. These Peach & Raspberry Popsicles are a favorite for hot summer days. They’re easy to make with fresh fruit and you can even give them an adult twist by adding a splash of spicy tequila if you’d like! 

Preparing popsicles takes very little time. It’s really easy to throw everything in the blender to make the slurry. I advise you take the time to make sure everything is blended very well; you don’t want anything to separate once they start to freeze in the mold. Sometimes, if the raspberries are very seedy you can strain out some seeds before you freeze the popsicles. I always add the honey for a touch of sweet. In the past people have asked if this can be omitted and I do not advise that. You really want the honey to play up the flavor of the fruit.  

If you’re going to go the adult route, don’t add too much tequila because you don’t want the popsicles to become dehydrating. The tequila is strictly for flavor! Lastly, if you don’t have peaches and raspberries on hand, you can work with other fruits so long as you keep the proportion of fruits and flavors the same. This method will work well with just about anything! 

If you have kids in the house be sure to get them involved with making these. It’s really fun for them to work the blender and fill the molds. Every little bit of cooking with kids definitely helps them learn more about the food they eat and how to cook for themselves.

Peach and Raspberry Popsicles (Healthy & Delicious) 

 

These popsicles are a healthy and delicious way to cool down on a hot summer day. They're made with fresh peaches, raspberries, and a touch of honey. To make these into adult popsicles add a little spicy tequila! 

 

Ingredients: 

  • 2 cups fresh peaches, pitted and chopped 

  • 1 cup fresh raspberries 

  • 1/4 cup honey 

  • 1 tablespoon lemon juice 

  • 1 cup water 

 

Instructions: 

  1. In a blender, combine the peaches, raspberries, honey, lemon juice, and water. Blend until smooth. 

  1. Pour the mixture into popsicle molds. 

  1. Freeze for at least 6 hours, or until solid.
