Pear & Walnut Salad

This Pear & Walnut Salad is a classic recipe that always fits the bill. I love serving it year-round, which is not something I say for every salad I make. The beauty of this recipe is that it typically works with almost everything. You really can’t go wrong when serving it alongside grilled chicken or fish, a pasta or rice dish, or a heavier meat.

The key to making this dish really sing is using excellent ingredients. A perfectly ripe pear, beautiful honey, and a nice lettuce will go a long way in making this a stand out salad. Sometimes in a pinch I use an apple if the pears aren’t ripe, and it still tastes absolutely wonderful.

Another thing I do a lot is toss the salad and dressing with my clean hands. This is a nice way to ensure the dressing evenly coats each leaf, but that the lettuce leaves don’t break. Then, I use tongs to gently individually plate each salad and top it with delicious cheese.

This is going to be a great one for your repertoire. You’re going to get so used to making it that it will become a staple in your house!

Pear and Apple Kataifi Tart

This is such a delicious tart to make when friends swing by. I make it a lot in the fall when we do a lot of apple picking!

Ingredients:

  • 1/2 package kataifi dough (shredded phyllo)

  • 2 ripe pears, peeled, cored, and sliced

  • 2 apples, peeled, cored, and sliced

  • 1/2 cup melted butter for kataifi

  • 4 tbsp butter ( for caramel sauce)

  • ½ cup of granulated sugar

Instructions:

  1. Preheat the oven to 350 degrees F.

  1. Peel, core and slice the apples and pears with a mandolin.

  1. Melt butter in the microwave for the kataifi and set aside.

  1. In a large, ovenproof sauce pan add the sugar and cook it over medium heat until it begins to melt. Whisk the sugar for about 5 minutes, making sure it doesn’t burn, while it melts into caramel. At the 5-minute mark, add the 4 tablespoons of butter and cook swirl it all together to make the caramel sauce.

  1. Turn off the heat and add the slices of pears and apples onto the caramel sauce in the sauce pan – cover the whole pan with apples and pears.

  1. In a separate bowl, pour the melted butter over the kataifi and toss so the kataifi is completely coated with butter.

  1. Place the kataifi evenly over the pears and apples, and place the pan in the preheated oven. Bake for 45 minutes, or until the kataifi is golden and toasted.

  1. Remove it from the oven and allow it to cool, then carefully flip the pan over onto a plate and enjoy.
