Today I'm sharing my method for making Quick Pickled Onions for sandwiches or salads or whatever you'd like to use them on. This is more of a method than a strict recipe, It's similar to the recipe for Toursi I filmed a while ago. Pickling vegetables is very common in Greece. It's a great way to preserve them for the months they aren't growing fresh in the garden!

I find pickled onions give such a nice zip to salads and sandwiches. I usually make a jar of these and keep them in the fridge to be added to whatever I'm making for people at the time.

I encourage you to play around with the seasonings in this recipe and find ways to make it your own. Quick Pickled Onions taste good on almost anything and you can use whatever herbs you have fresh in your garden to give them flavors that taste good with the dish you're preparing.

Quick Pickled Onions for Sandwiches
This is my go-to method for pickling onions and shallots to use on sandwiches and salad.
Ingredients:
1 medium red onion (or 2 small), thinly sliced
1/2 cup apple cider vinegar
1/2 cup water
1–2 tablespoons sugar (adjust to taste)
1 teaspoon salt
Optional flavorings:
1/2 teaspoon black peppercorns
1 clove garlic, smashed
1/4 teaspoon red pepper flakes (for a bit of heat)
Fresh herbs like thyme or dill
Instructions:
Cut the onion into thin rings or half-moons, depending on your preference.
In a small saucepan, combine the vinegar, water, sugar, and salt. Heat gently until the sugar and salt dissolve. No need to boil.
Place the onions in a jar or bowl. Add garlic, peppercorns, red pepper flakes, or herbs if using.
Pour the hot brine over the onions, making sure they’re fully submerged.
Let the onions cool to room temperature, then cover and refrigerate.
They’ll be ready in about 30 minutes for a quick pickle, but flavor improves after a few hours or overnight.
Storage: Keeps in the fridge for up to 2 weeks.
