Earlier this year I indicated I was going through a clementine juice cocktail phase. Here’s another cocktail from that time – a Clementine Margarita. I’m continuing to juice clementines like crazy because they’re still in season at the store. We love their sweet, citrus flavor that almost tastes like candy it’s so intense.
For this drink I decided to heat things up a bit by making a spicy rim with a touch of jalapeno salt. This works really well with the citrus flavors and tequila; it’s tastes a little tropical with a touch of southwestern flavor.
Margaritas are great to serve any time of year, but this makes a particularly good cocktail for winter into early spring. I hope you have fun with it! Cheers!
Spicy Clementine Margarita
2 oz spicy tequila
2 oz clementine juice
1 oz triple sec
1 oz lime juice
1 oz simple syrup
Spicy salt for the rim
Homemade Simple Syrup (or you can use store-bought):
Place 1 cup sugar and 1 cup water in a small saucepan and warm it over medium heat. Stir the mixture gently until the sugar has completely dissolved. Remove the mixture from the heat and allow to cool to room temperature. Use as much as you need for the cocktail and save the rest in a covered container in the refrigerator.
To make the cocktail:
Rim the glass with the spicy salt by dipping it in a little lime juice and then dipping it in the spicy salt.
Add ice to a cocktail shaker, then add your tequila, clementine juice, triple sec, lime juice, and simply syrup. Put the cap on the cocktail shaker and shake well.
Pour the margarita into the prepared glass and serve!
