Sweet Potato Rounds with Feta & Honey

Sweet potatoes are so delicious, but I find I become limited in what I make with them sometimes. Most of the time I have them in my kitchen I make bake sweet potato fries or mashed sweet potatoes or sweet potato casserole. They are all excellent, but it can get a little repetitive. This is why I started making Roasted Sweet Potato Rounds with Honey & Feta. They are delicious baked sweet potato sounds with a drizzle of sweet honey and topped with savory feta.

I bake these in a dish that gets nice on hot on the bottom because you want the bottoms of the potatoes to get nice and crispy and heated all the way through. Then, I add the honey and feta on top.

These are a slightly unexpected way to serve sweet potatoes, which makes them fun to bring out during the holidays. I serve them on buffets as a side dish, or even as a main vegetarian course. They are can also be served as an appetizer if you’re doing a multi-course meal.

Roasted Sweet Potato Rounds with Honey & Feta
These are a great heavy snack or side dish. I like them because they’re a little sweet and a little savory and still very healthy.
Ingredients
2 large sweet potatoes (peeled if you like, cut into ½-inch thick rounds)
2–3 tbsp olive oil
½ tsp salt
¼ tsp black pepper
½ tsp smoked paprika (optional)
½ cup crumbled feta cheese
2–3 tbsp honey (or hot honey, for a kick)
2 tbsp chopped fresh parsley (or mint)
¼ cup toasted walnuts or pecans (optional, for crunch)
Instructions
Preheat oven to 425°F . Line a baking sheet with parchment.
Toss rounds with olive oil, salt, pepper, and smoked paprika until evenly coated. Arrange in a single layer on the sheet.
Roast the potatoes for 20–25 minutes, flipping halfway, until golden and tender.
Transfer rounds to a platter. Sprinkle with feta, drizzle with honey, and top with parsley (and nuts, if using).
Serve warm as an appetizer or side.
