Breakfast Pizza

I'm a big fan of changing things up in the kitchen now and then. When my children were little I used to do the occasional "breakfast for dinner" evening. It was always a fun surprise on a weeknight. Another thing I've always enjoyed doing is serving Breakfast Pizza. Yes, pizza for breakfast is real and so much fun.

To make my family's favorite version of breakfast pizza I start with a pre-made pizza dough. Then, instead of using red sauce, I top it with eggs, cheeses, bacon, and the vegetables we'd usually put in an omelet. When the crust is cooked it tastes like a delicious omelet on toast. Yum!

The best part about Breakfast Pizza is that it can easily be served for any meal of the day. I like to make it for dinner, but I have made it for a fun brunch before. The kids always get a kick out of it and the adults love it, too!


Breakfast Pizza 

This is a fun spin on breakfast! I also like to serve it for dinner when we need to change it up. 

Servings: 4-6 


Ingredients 

  • 1 pre-made pizza dough (or homemade if you prefer) 

  • 5 large eggs 

  • 1 cup shredded mozzarella cheese 

  • 1/2 cup shredded cheddar cheese 

  • 4–6 slices cooked bacon, crumbled (or breakfast sausage, cooked and crumbled) 

  • 1/2 small red bell pepper, diced (optional) 

  • 1/4 cup green onions, sliced 

  • Olive oil or cooking spray 

  • Salt and pepper, to taste 

  • Optional: fresh herbs (parsley, chives) for garnish 


Instructions 

  1. Preheat the oven to 425°F. If using a pizza stone, place it in the oven to warm up. Alternatively, you can use a 9x13 baking pan that’s lightly oiled. 

  2. Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer to a greased baking sheet or preheated pizza stone. 


    Assemble the pizza: 

  3. Lightly brush the crust with olive oil. 

  4. Sprinkle the mozzarella and cheddar evenly over the crust. 

  5. Scatter the cooked bacon (or sausage), diced red pepper, and green onions. 

  6. Make 2–3 small wells in the toppings and crack the eggs into them—or, if you prefer, scramble the eggs lightly and spread over the pizza instead. 

  7. Return the pizza to the oven and bake for 15 – 20 minutes, until the cheese is melted and bubbly, and the eggs are cooked to your preference (longer if you like fully set yolks). 

  8. Remove the pizza from the oven and season with salt and pepper. Garnish with fresh herbs if desired. Slice into squares or triangles and serve immediately.
