Classic Lobster Rolls

Is there anything better in the summer than a Classic Lobster Roll? I don't think so. I grew up in Philadelphia and now I live in New England so I've been enjoying lobster rolls my whole life. It's such a part of summer culture here. It's almost sacrilege not to eat as many as you can while the weather is hot and dinner can be enjoyed outside! (Yes, you can eat them inside, too, but they just aren't the same, I think!)

I make my lobster rolls "Maine-style," which means the lobster is tossed with clarified butter and salt. The other way they're often served is with the lobster tossed lightly in mayonnaise. This is fine, but I still prefer the buttered option. When I'm catering I'll make these mini-style and they are always a huge hit.

I save a lot of time by buying my lobster cooked and shelled. This is hugely convenient because I don't have to go through the entire process of cooking and cracking the lobsters myself. For the buns I use classic split top hot dog buns because I like the way they can be stuffed with lobster meat.

When you make these be sure to serve them with a salty side like homemade french fries or potato chips. This is not a meal where you try to skimp on calories! And, for the complete New England experience, have a cold beer or glass of wine to wash it all down.
Warm Buttered Maine-Style Lobster Roll

1 lb cooked lobster meat (claw, knuckle, and tail), chopped into bite-sized pieces
2–3 tbsp unsalted clarified butter - plus extra for drizzling
Salt, to taste

Rolls
4 New England split-top hot dog buns
2–3 tbsp unsalted clarified butter, melted or softened for toasting
Instructions:
1. Prepare the Lobster
Heat 2–3 tbsp butter in a skillet over medium-low heat.
Add lobster meat and warm gently for 2–3 minutes—do not overcook.
Season lightly with salt and pepper
2. Toast the Buns
Butter the cut sides of the buns generously.
Toast in a skillet or on a griddle until golden brown and slightly crisp (about 1–2 minutes per side).
3. Assemble the Rolls
Fill each toasted bun with warm lobster meat.
Drizzle with extra melted butter for maximum richness.
Serve immediately with a lemon wedge on the side.
