Greek Style Grilled Vegetables

Grilled vegetables are the base of my popular Greek dishes. This is my method for grilling them. They turn out well every single time.

Makes 6 Servings

Timing: 15 minutes prep, 15 minutes grilling

Ingredients for Dressing

1 medium eggplant, sliced lengthwise in 1/4’’ slices

1 medium zucchini, sliced lengthwise in 1/4’’ slices

1 yellow pepper, cored and cut into 1’’ slices

1 red pepper, cored and cut into 1’’ slices

1 red onion, sliced in ½’’ slices

1/4 cup olive oil

1 ½ tsp salt

1 tsp black pepper

2 tsp oregano


1. Bring your favorite grill pan (or outdoor grill) to medium high heat.

  1. While your grill is heating up, add your vegetables to a large mixing bowl and toss with olive oil, salt, pepper and oregano to coat.

  2. Grill your vegetables for 3-4 minutes per side, or until just beginning to char.

  3. Serve as is, or in a grilled veggie pita (RECIPE HERE)

  4. Enjoy!
