Grilled Halloumi topped with a Tomato and Cucumber Salsa

This delicious appetizer is perfect to serve any time of year. I love to serve it in the summer when everyone wants something cool to eat in the warm weather. This is also great for serving at parties, guests love the salty cheese with fresh vegetables with a glass of wine.


Makes 8 Servings

Timing: 20 minutes


Ingredients

Grilled Halloumi (click here for recipe)

2 pita

Olive oil for brushing

1 vine tomato, chopped finely

¼ red onion, chopped finely

1/3 English cucumber, chopped finely

Juice of ½ a lemon

¼ cup finely chopped parsley

2 tbsp olive oil

Balsamic reduction, for drizzling

Garnish: sliced cucumber, cut in ¼’’ slices (lengthwise)


Instructions

  1. Bring your favorite grill pan (or outdoor grill) to medium high heat.

  2. While your grill is warming up, make Greek salsa. In a medium bowl combine tomato, red onion, cucumber, lemon juice, olive oil and parsley.

  3. Brush your pita with olive oil, and grill 1-2 minutes per side.

  4. Slice pita in triangles, and set aside.

  5. Lay out your slices cucumber and place your halloumi slices on top. Top with a generous amount of your Greek salsa and repeat until all halloumi is used. It’s ok to have left over salsa – you can serve this in a little dish on the side.

  6. Top halloumi with balsamic drizzle.

  7. Serve with grilled pita and Enjoy!
